Note
Red onion is a great source of prebiotic-rich fiber, to keep your gut and immune system strong. Purple-colored vegetables are rich in anthocyanin, which are helpful for blood flow and brain health. Red onions contain sulfur, great for healthy joints, and quercetin, important in lung health and mitigating the damages of stress to the body. If you don’t like the strong taste, soak the onions in ice water for 5 min. to eliminate the taste but maintain the delicious crunch.
